Ingredients
- 5 Granny Smith apples, cored and sliced into thin wedges or the other option is diced
- 3 tablespoons lemon juice
- 3 celery sticks, sliced
- 1 1/2 cups seedless grapes, halved
- 1/2 cup dates, sliced
- 1 cup diced hard cheese
- 1 cup chopped pecan or walnuts
- Dressing
- 1 1/2 cups plain greek yoghurt
- 1 cups mayonnaise
- 1/2 cup orange juice
- grated zest of one orange
Method
- Slice the apples and then toss them into a bowl with the lemon juice
- Season lightly with salt and pepper
- Add the sliced celery, seedless grapes and the dates, mix well
- Combine the dressing ingredients and stir.
- Pour the dressing over the apple mixture and toss until all coated
- Place the salad on your choses dish and sprinkle the nuts on top
- You can sprinkle some chopped mint on top(optional)
- Serve with other salad for a summer lunch.
