Ingredients

  • 5 Granny Smith apples, cored and sliced into thin wedges or the other option is diced
  • 3 tablespoons lemon juice 
  • 3 celery sticks, sliced
  • 1 1/2 cups seedless grapes, halved
  • 1/2 cup dates, sliced 
  • 1 cup diced hard cheese  
  • 1 cup chopped pecan or walnuts 
  • Dressing 
  • 1 1/2 cups plain greek yoghurt
  • 1 cups mayonnaise
  • 1/2 cup orange juice
  • grated zest of one orange

Method

  • Slice the apples and then toss them into a bowl with the lemon juice
  • Season lightly with salt and pepper
  • Add the sliced celery, seedless grapes and the dates, mix well 
  • Combine the dressing ingredients and stir.
  • Pour the dressing over the apple mixture and toss until all coated 
  • Place the salad on your choses dish and sprinkle the nuts on top 
  • You can sprinkle some chopped mint on top(optional)
  • Serve with other salad for a summer lunch.
