Ingredients

  • 1 small red onion finely sliced 
  • 1 stick of celery, finely sliced 
  • 1 tin of butter beans (400g)
  • 1 tin of tuna in olive oil
  • Fresh herbs, parley or mint or dill(your choice)
  • 1/2 avocado 
  • Olive oil and Balsamic vinegar 
  • Salt and Pepper 
  • Bean sprouts 

Method

  • Peel the red onion and slice it as finely as you can
  • Trim and finely slice the celery, chop the herbs you have chosen.
  • Drain the beans and the tuna.
  • Place the beans on a flat serving dish and top them with the tuna and all onion and celery.Add the herbs.
  • Cut the Avocado into thin slices and add them to your salad .
  • Top the salad with the bean shoots and sprinkle the oil and vinegar and salt and pepper to taste. 
  • Serve with a green salad.
