Ingredients
- 1 small red onion finely sliced
- 1 stick of celery, finely sliced
- 1 tin of butter beans (400g)
- 1 tin of tuna in olive oil
- Fresh herbs, parley or mint or dill(your choice)
- 1/2 avocado
- Olive oil and Balsamic vinegar
- Salt and Pepper
- Bean sprouts
Method
- Peel the red onion and slice it as finely as you can
- Trim and finely slice the celery, chop the herbs you have chosen.
- Drain the beans and the tuna.
- Place the beans on a flat serving dish and top them with the tuna and all onion and celery.Add the herbs.
- Cut the Avocado into thin slices and add them to your salad .
- Top the salad with the bean shoots and sprinkle the oil and vinegar and salt and pepper to taste.
- Serve with a green salad.
