Meatballs with Lemon and celeriac

Ingredients
- 400g beef mince
- 1 medium onion, finely chopped
- 120g fresh breadcrumbs
- 20g parsley
- 1 egg, beaten
- 2 Tbsp olive oil
- 1 small celeriac
- 3 garlic cloves, crushed
- 500ml chicken stock
- 3 tsp lemon juice
- 1 tsp ground tumeric
- 1 tsp sweet paprika
- 2 tsp fennel seeds,lightly crushed
- Salt and Pepper
Method
- Put all the mince, onion, breadcrumbs, parsley, egg,1/2the spices and salt and pepper into a large bowl.
- Mix all together by using your hands and make about 20 small balls and set aside.
- Put the oil in a frying pan, add the meatballs and sear for about 5 minutes, turning them so they do not burn.
- Transfer them to a separate plate.
- In the pan add the celeriac, garlic and remaining spices and cook for 2 minutes until the garlic has take coloured and the spices smell good.
- Return the meatballs to the pan and add the stock and lemon juice and more salt and pepper if need be.
- Simmer gently until the meatballs are cooked and celeriac is nice and soft.. 30 minutes.You can put a lid on the pan.
- Remove the pan from the heat and allow it to sit for 5 minutes and serve with lovely steamed rice or couscous.
