Ingredients
- 250gm medjool dates
- 6 Tbsp water
- 1/2 tsp bicarb of soda
- 2 Tbsp coconut oil
- 2 free range eggs
- 2 Tbsp brown sugar/coconut sugar
- 2/3 cups almond flour
- 1/2 cup rice flour / flour
- 1/2 cups coconut cream/cream fresh
- 2 Tbsp maple syrup
- or natural yoghurt
Method
- Place the dates after removing the stones in a saucepan
- Add the water and the bicarb of soda and slowly heat it up until the dates are soft and moochy
- Remove form the heat
- Place the coconut oil in a small bowl and add the eggs.
- Beat the eggs and oil until light
- Measure out your flours and sugar and add them to the egg mixture
- Add the dates and mix well
- Place in a baking dish( 20cm x 15cm roughly) and place some chopped nuts on top and smooth it out with a spoon
- Bake at 160C for 30 minutes, until golden brown but not dry.
- For the cream
- Mix the coconut cream and the maple syrup together.
- Cut up the date brownies and serve with the cream or yoghurt
