Ingredients
- 1/2 cucumber,sliced
- 30g lambs lettuce/lettuce or spinach
- 10g mint leaves, chopped
- 10g coriander leaves, chopped
- 1 tsp chia seeds
- Dressing
- 1 Tablespoon lemon juice
- 1 small garlic pressed
- 2 cm ginger
- 20g plain yoghurt
- sea salt to taste
Method
- For the dressing, blend all the ingredients together to make a liquid dressing and put aside.
- Slice the cucumber finely .
- Wash the lettuce, mint and coriander.Chop the mint and coriander finely.
- Mix the cucumber and lettuce in a salad bowl, add chopped herbs and the dressing.
- Sprinkle the seed and serve
