Ingredients

  • 4 mixed colour carrots 
  • 2 small crunchy apples 
  • 1/2 juice of lemon 
  • 2 tablespoons mixed: pumpkin, sunflower and sesame seeds 
  • 2 tablespoons Greek yoghurt 
  • 1/2 clove of crushed garlic
  • 1 tablespoon of olive oil 
  •  1 teaspoon red wine vinegar 
  • Salt and pepper
  • Sliced radishes to garnish 

 

Method

  • Make the dressing first: mix the greek yoghurt into the crushed garlic and add the lemon juice, add the olive oil. Slowly add the vinegar. Mix together and add salt and pepper to taste and set aside.
  • Wash the carrots and then grate or cut them into matchsticks.
  • Wash, core and slice or grate the apples the same way as the carrots.
  • Toss both into the dressing so they are well covered.
  • Place the mixture into a bowl and top with the seeds and add salt and pepper if need be to your taste.
