Moroccan pasta

Delicious food without meat .

It’s simple pasta with a sauce a-la –Marrakesh with a wonderful aroma of cinnamon, almonds and cumin.

300g spaghetti or others pasta

100ml olive oil

1 onion, finely chopped

3 garlic cloves, finely chopped

5 large tomatoes

1 tsp ground cinnamon

1 tsp ground cumin

1tsp ground turmeric

100g toasted almonds

100g cooked chick peas(tinned are fine )

Mint, coriander and parsley leaves

Salt and pepper to taste


1)Cook the pasta in boiling water and a pinch of salt until al dente.

2)Meanwhile, heat the oil in a pan and gently fry the onions and garlic until soft.

3)Add the tomatoes ,cinnamon, cumin and turmeric and cook over a medium heat for about 20 min until the tomatoes break down.

4)Season the sauce and then add the almonds and chick peas.(you can put the almonds in a pan and brown then a little and make sure you remove the skins off the tinned chick peas)

5)Drain the pasta and divide between 4 plates.

Fold the chopped herbs into the sauce and mix with the pasta.
